In the 1930's a Canadian dentist by the name of Weston A. Price traveled the world in search of what it means to have health and vitality. He found when he compared the diets of indigenous cultures from all around the world, a similar theme: fish, meat, lots of animal fats, no processed foods, veggies, nuts, legumes, whole grains, dairy, and ferments. Well, if you thought Ellen White and John Kellogg were bad, wait until you learn about Ancel (the INCEL) Keys and his work in the 1960s. He was a real pick-me, who thought he was something special and is known today as the father of cholesterol. I talk here about some new information I've recently learned, about the importance of knowing the difference between beef, pork, and chicken. Monogastrics (animals with a single stomach, so to speak) like us, but namely pork and chicken, don't process polyunsaturated fatty acids the same way ruminants (multi-chambered stomach digesters like cows, deer, elk, bison, goats, sheep, etc.) do.
